Welcome to my Fall Cozy Dinner Series 🍂 Starting with this High-Protein Creamy White Chicken Chili — thick, cozy, a little spicy, and packed with 48g of protein per serving. The secret is blending a whole head of cauliflower with some of the white beans and cooking liquid. It makes the chili incredibly creamy without needing heavy cream — and you really don’t taste the cauliflower. 🥣 CREAMY WHITE CHICKEN CHILI Makes 6 generous servings Ingredients • 2 lb boneless, skinless chicken breasts • 1 medium head cauliflower, about 1½–2 lb • 1 tbsp olive oil • 1 medium yellow onion, diced • 1 large poblano pepper, diced • 4 cloves garlic, minced • 2 (4-oz) cans diced green chiles • 1 (15-oz) can cannellini or Great Northern beans, drained + rinsed • 3 cups low-sodium chicken broth • 2 tsp cumin • 1 tsp dried oregano • ½ tsp ground coriander • ½ tsp smoked paprika • 1½ tsp kosher salt • ½ tsp black pepper • ¼ tsp cayenne, optional • 4 oz reduced-fat cream cheese • ½ cup shredded Monterey Jack • Juice of 1 lime • Cilantro, optional Directions 1. Sauté the onion and poblano in olive oil for 4–5 minutes. Add garlic and cook another 30 seconds. 2. Add the onion mixture, green chiles, beans, broth, and seasonings to your slow cooker. 3. Nestle in the chicken breasts and place the cauliflower pieces on top. 4. Cook on LOW for 4–5 hours or HIGH for 2½–3½ hours. 5. Remove the chicken. Transfer the cauliflower to a blender along with about half the beans and 1½ cups of the cooking liquid. Blend until completely smooth. 6. Pour it back into the slow cooker and stir in the cream cheese and Monterey Jack. 7. Shred the chicken and return it to the chili. Let everything heat together for about 10 minutes. 8. Finish with fresh lime juice and adjust seasoning to taste.
