If using sherry or white wine, add it now and cook for 1 minute. 5. Combine and season:  Return the shrimp to the wok. Add the soy sauce, oyster sauce,  sesame oil, and black pepper. Stir-fry for another minute to combine everything and coat the ingredients in the sauce. 6. Serve:  Taste and adjust seasoning with salt if needed. Serve hot over rice or noodles.
