In Lebanon 🇱🇧🇱🇧 we never use mayonnaise for babaghanoug we use tahini sauce lemon juice and salt and Drizzle of olive oil

In the Caribbean we roast the eggplant, put onions, garlic, hot peppers combine everything and put hot oil over the eggplant. We eat it with hot sada roti, or and other types of roti or bakes 😍
