i can only go to the gym 3x a week but i skate 3-7x a week and have team workouts that are more athletic foucused. should i do 2 sets for everything or 3-4 to make up since i can only go 3x a week.

I prefer reverse curls, you should try them on the seated row machine and do them preacher curl style. Just toss a handle on the cable

With my gamer curls I like using wraps to really insure not only am I getting the mind muscle connection but not worrying about grip
