Bolo De Cenoura or Brazilian Carrot Cake. Not too different from a traditional carrot cake but this one doesn’t contain any spices like cinnamon and no cream cheese frosting. It’s just too easy of a cake and tastes incredibly delicious. Recipe ⬇️ 1 cup grapeseed oil or any vegetable oil 4 medium carrots chopped larger pieces 4 large eggs 1tsp vanilla 2 cups caster sugar 2 cups plain flour 1tsp bicarb soda 1tsp baking powder Preheat oven to 160 degrees (fan forced) In a blender add chopped carrots, oil, eggs, sugar and vanilla. Blend on low speed and slowly raise the speed to high until all ingredients are smooth. Add the flour, baking powder and bicarbonate soda and blend again till combined. Spray baking pan with canola spray then brush evenly. Dust with flour and pour cake batter until 3/4 filled. Or brush with sesame paste and line with a thin sheet of baking paper. Don’t fill pan more than that as cake rises significantly and bake for 60-70min or till fork or skewer comes out clean. Allow to cool before topping with chocolate sauce. 1 cup caster sugar 3/4 cup drinking choc 2tbsp cocoa powder 2tbsp butter 4tbsp milk Mix in a small pot on medium heat until it starts to simmer. Pour only when cake is cold. Refrigerate iced cake until ready to cut in to squares. #carrotcake #blendercake #bolodecenoura #fatimahomran
