Ep 6 of “can we use yogurt dough to replace shop bought pastries and breads” Obviously I had to try my viral spinach and feta pastries and replace the puff pastry with this yogurt dough and let me tell you, they were incredible. So fresh and homemade tasting. I think I’ll make them using this dough from now on. Dough: 300g plain flour 240g Greek style yogurt 1/2 tsp salt 1 x tsp baking powder Oil Filling: 120g frozen spinach 1 x onion chopped 3 x garlic cloves chopped 1 x tsp oregano 1/2 x cup water 1 x egg white 200g feta 1 x egg yolk with 1 x tsp milk Sesame seeds Mix the salt into the yogurt and add the flour and baking powder. Stir until the dough is shaggy. Knead for 2-3 minutes on a floured surface and cover and rest for 30 minutes while you make your filling. Fry onion and garlic for a few minutes till tender, add in spinach, herbs, salt and pepper and the water and fry until the water has evaporated. Cool down, for quickest cooling spread on a large plate. Once cooled add in the cheese and egg white and mix well. Preheat your oven to 180C and add parchment paper to a baking dish Flour the surface and the top of your dough and roll it out as thin as you can into a rectangle shape. Sprinkle some more flour on top and brush all over with oil. Fold it over itself horizontally in half. Brush some more oil and then fold over each side in thirds as shown in the reel. Roll it out in a rectangle as shown. Don’t worry if some oil seeps out when your rolling the dough will suck it up. Spoon your filling in one side a couple of inches away from the edge and roll it up. Press it down to flatten slightly and cut into slices 2-3 inches wide. Add to your baking sheet and brush with the yolk mix, top with sesame seeds and bake for 30-35 minutes. Enjoy D 🫶 #fyp #Recipe #feta #spinach
