We wondered how many of you will have left over food from the Christmas Day so me and @JASMIN came up with 3 zero waste ways to use your mashed potatoes and turn them into something absolutely delicious! Merry Christmas to all of you and I just want to share my sincere love for all the support received over the past year wishing you an even better 2023 🫶 STUFFED FLAT BREAD •1 x cup vegan yoghurt •1-1/4 x self raising flour •Pinch salt •For filling •2-1/2 x cup mashed potatoes •1 x cup vegan cheese •1/2 x cup sundried tomatoes •Herbs •3 x black garlic cloves STEP BY STEP: - Mix flour,yoghurt ,salt and form the dough - Divide the dough in 4 or 6 small dough balls and roll them to for a thin layer . - Mix together mashed potatoes,herbs ,cheese, s.d tomato,seeds and add 2 tbsp on top of the rolled dough. - Close the dough , some water would help sealing the middle. - Cook on a non stick pan until nice and gold . - Serve with fresh herbs or some dips. POTATO BREAD: •2/3 x cup vegan milk •1 x tbsp date paste •2-1/4 x tbsp dry yeast •2 x cups mashed potatoes •3 x cup white flour •1/3 x teasp salt •Rosemary •Nigella seeds STEP BY STEP: - Mix together hot but not boiling vegan milk with date paste ,yeast and 1 tbsp flour . - Keep on side til frothy for about 10min - Then mix white flour, mashed potato and wet mix together until forming a ball . - Cover with a towel and let proof for 1 hour - After doubled the size knead a few times again and place the dough in to a warm tin , cover with wet towel and let proof for 40 more min. - Bake at 180* for 40 min until the top has formed a crust.
