Bakemas Day 6 🧁 Vanilla Cupcake Recipe: *This recipe makes about 14 cupcakes* - 1 1/2 cup cake flour (195g) - 1 cup granulated sugar (228g) - 1/4 tsp baking soda - 1 1/4 tsp baking powder - 1/4 tsp salt - 3/4 cup melted unsalted butter (170g) - 2 eggs - 3 tsp vanilla extract (15 mL) - 1/2 cup sour cream (127g) - 1/2 cup whole milk (118 mL) Directions: - preheat your oven to 350°F and prep your cupcake tin with cupcake liners - In a microwave safe bowl, melt the unsalted butter - In a separate bowl, warm the sour cream and milk together (I like to warm these two ingredients in the microwave for about 20-30 seconds) - Add all of the wet ingredients into your butter bowl and mix until well combined. - In a separate bowl, whisk together all of the dry ingredients. - Add the wet ingredients to the dry ingredients and mix until just incorporated (don’t over mix!) - Add the cupcake batter to your cupcake pan lined with cupcake liners and bake for 16-18 minutes or until a wooden toothpick inserted into the center of each cupcake comes out clean (this may take more or less time depending on your oven so be sure to keep an eye on them!) - Let the cupcake fully cool after baking before decorating and enjoy :) Vanilla Buttercream Recipe: Ingredients: *This is my double batch recipe so be sure to cut it in half if you want to make less!* - 4 cups of room temperature unsalted butter (8 sticks or 904g) - 11 cups powdered sugar (3.6 lbs) - pinch of fine salt - 1 tsp vanilla extract  - 1/2 cup heavy cream  Directions: - Add the room temperature butter to the bowl of your stand mixer and mix on medium speed for 8-10 minutes using the paddle attachment. You can also use an electric hand mixer if you’d prefer!  - Scrape the sides of the bowl down halfway through mixing the butter to ensure that it’s all whipped very well. - Add half of the powdered sugar, half of the heavy cream, all of the vanilla, and a tiny pinch of salt to the mixer. Mix on low until the powdered sugar is incorporated. - Add in the remaining powdered sugar and heavy cream. - Begin to mix on low speed until the sugar is incorporated and then increase the speed to medium. - Let the mixer go for about 1 minute and then use a rubber spatula to scrape the sides and bottom of the bowl to ensure that everything is mixed in well.  - Continue mixing on medium speed for 8-10 minutes or until the buttercream is very smooth (don’t stop the mixer and scrape the bowl down too many times during this step!! The more you open the mixer, the more air bubbles get into the buttercream and it will not be as smooth). - Once the buttercream is smooth, stop the mixer and fill your piping bags for your cupcakes and enjoy!
