Part 5 to 7 Part Series on a Country Thanksgiving:  Apple Pie Filling Make this delicious apple pie filling now, and on Thanksgiving day use it with the pie crust I shared with you previously for a fantastic homemade apple pie! Ingredients: - 3 cups water - 12 cups diced, cored, and sliced apples (approximately 15 small to medium apples) - 1 cup granulated sugar (Isubstitute with 1 cup honey) - 1 cup brown sugar - ½ cup fresh lemon juice - Pinch of salt - ¾ cup starch (such as cornstarch or clear gel) - 1 tablespoon cinnamon - ½ teaspoon nutmeg Yield: This recipe makes 6 pint-sized jars. Instructions: 1. Prepare the Jars: Clean and sanitize your jars, lids, and rings. Fill your water bath canner with water and keep it warm. 2. Prepare the Apples: Peel, core, and slice the apples. To prevent browning, soak the sliced apples in a mixture of lemon juice and water while you prepare the other ingredients. 3. Cook the Filling: In a large saucepan, combine the diced apples and both sugars. Stir well to mix. Add the lemon juice, salt, spices, and water, followed by the cornstarch. Stir thoroughly to combine.  4. Boil the Mixture: Bring the mixture to a boil. Once it reaches a hard boil, let it boil for one minute to thicken. 5. Fill the Jars: Immediately transfer the hot apple filling into your prepared jars. Make sure to remove any air bubbles, check for head space (1 in)and clean the rims of the jars. Place the lids and rings on top, tightening them fingertip-tight. 6. Process the Jars: Place the jars in the warm water bath. Increase the heat to bring the water to a boil. Once boiling, set a timer for 25 minutes to process the jars. 7. Cool and Store: After 25 minutes, carefully remove the jars from the water bath and let them sit undisturbed on the countertop for 24 hours.
