@georgieclarke: Strawberry & ricotta cakes 🍓 Ingredients: 115g butter 125g caster sugar 3 eggs, separated 2 tbsp cornflour 175g cups ground almonds 200g ricotta 1 vanilla pod, seeds scraped out 1 lemon zest a pinch of salt strawberries Brown sugar for top & icing sugar Method: Heat your oven to 190°C Line the cake tins with baking paper. Use a large flat spoon or fork to cream the butter and the sugar together until fluffy and creamy. Slowly add the egg yolks, one at a time, and beat until smooth. Add the cornflour, ground almonds, ricotta, seeds from the vanilla pod, lemon zest and salt, and mix well to form a smooth batter. Whisk the egg whites to soft peaks and gently fold into the cake batter till well combined. Transfer the batter into your pre-lined tins. Decorate with strawberries however you like & sprinkle brown sugar to coat. Pop I oven - timing will depend on your muffin sizes) anywhere between 25-40 minutes. Once ready, sprinkle some icing sugar on top. #strawberryricottacake #easybake
