@small.town.swag: Let’s ✨cook dinner for my family✨ sheet pan quesadillas for liiiiife — love this quick + easy + crowd pleaser 💯🙌🏽 🌮Sheet Pan Quesadillas 🌮 ➡️ours was altered from this recipe by @jocooks via Pinterest — love this for an easy weeknight dinner for back to school time 🚌🏫 Ingredients ▢ 8 large tortillas (any size fine; may need more of smaller size) ▢ 2 tablespoon olive oil (left this out when browning) ▢ 1 medium onion & green bell pepper chopped (left out) ▢ 1 pound ground beef (can substitute chicken) ▢ 1 packet of taco seasoning (or make your own) ▢ ½ teaspoon garlic powder ▢ ½ teaspoon salt (or to taste) ▢ ½ teaspoon pepper (or to taste) ▢ 1 - 15oz can black beans (drained and rinsed) ▢ ¾ cup corn kernels (canned, drained and rinsed)(left out) ▢ 2-3 cups shredded cheese (I measured with my heart 😉) Instructions Preheat oven to 425°. Grease sheet pan with cooking spray. Brown hamburger with olive oil. Add onion, bell pepper to skillet. Cook for 3 minutes until onion begins to soften & gets translucent. Add taco seasoning. Stir well. Cook until no more pink. Optional: Stir in the black beans, corn & other veggies. Cook for an additional 2 minutes, until beans heat through. (Note: I added our veggies on top of cooked meat before putting in the oven.) Place 6 (amount depends on size) flour tortillas around edges of sheet pan, with tortillas hanging halfway over the edge of pan, leaving a gap in center. Place 1-2 tortillas in center to cover gap. Spread mixture over tortillas. (Note: This is when I added our extra veggies on top here.) Sprinkle cheese on top. Place 1-2 tortillas on top in center. Fold in the tortillas hanging over edge of pan to the middle. Place second sheet pan on top of the folded tortillas to cover. Press down. Bake in oven for 20 minutes. Remove top sheet pan. Bake 5 more minutes, or until brown.
