Spray the breadcrumbs with olive oil and bake for 5-8 mins until golden. This is the key to crispy baked schnitzels! 2.Sprinkle chicken with salt and pepper. Set aside for 10 mins while you prepare the remaining ingredients (important step, don’t skip! It protects the chicken from drying out during baking). 3.Dredge the chicken in the flour, followed by the egg wash, followed by the toasted breadcrumbs. 4.Place on a wire rack (for maximum crispness otherwise a baking tray is fine too) and bake 12-15mins. Creamy Chicken and Sun-dried Tomato Pasta Bake I’m always looking for quick and easy family dinner options for busy weeknight dinners and this comforting pasta bake ticks all the boxes! It is so easy to make with simple ingredients, yet it is packed with flavour. It’s covered in a crunchy, cheesy, molten top with tender chicken and pasta underneath, coated in a rich, creamy sauce. It reheats well (so you can enjoy leftovers the next day!) and being made in one pot, cleanup is a breeze. Ingredients 500g rigatoni 2 tbsp olive oil 1 onion, finely chopped 1 tsp garlic, freshly minced 500g chicken thigh fillets, cut into bite-sized pieces 1 tsp paprika ½ tsp salt ½ tsp black pepper 1 cup sun-dried tomatoes, sliced 2 cups thickened cream 2 cups fresh baby spinach leaves ½ cup parmesan cheese, freshly grated 1 cup mozzarella, freshly grated Method 1.Preheat the 180°C fan. 2.Cook the pasta as per the packet instructions, less 2 minutes. Rinse in cold water and drain, set aside. 3.Heat the olive oil in a large, oven-proof skillet on medium-high heat. Add the onion and garlic. 4.Cook, stirring for 1-2 minutes until softened. 5.Add the chicken thigh, paprika, salt and pepper. Cook 3-4 minutes until browned. 6.Add the sun-dried tomatoes, cream and fresh baby spinach leaves. Cook for 2 minutes until the spinach has wilted, stir through the parmesan cheese and cooked pasta. 7.Transfer to an oven-safe dish if required and then sprinkle with mozzarella cheese. 8.Bake for 10-15 minutes or until golden and bubbling.
