@oliveyousomatcha: Frozen dumplings are the best! Once the cooler weather is on its way, so are the dumpling cravings! Which isn’t great on the Wallet, though. Unless if you make them yourself! I always try to have my freezer stocked with dumplings. They are absolutely delicious and the ultimate convenience food. My daughters birthday was this week, and she requested a dim sum dinner for her birthday. My partners elderly mom lives with us and she needs soft and low sodium food. So I created six different versions of dumplings that worked for her dietary restrictions. I did actually measure the recipe! So I will be posting a series with all of the soft and low sodium dumpling recipes! Here’s how I make a fast easy lunch for our elderly parent and for the rest of the family using some of the frozen dumplings. We were starving, and I was short on time, so I threw together a very quick broth. I combined water, dried mushrooms, garlic, grated ginger, and scallions. I brought that to a boil and down to a simmer for about 10 minutes. Then I added a little bit of Ramen concentrate. Which is perfect when you are trying to make a quick broth. I also added some truffle spread. This created a really nice complex umami flavor. I wanted our elderly parents dumplings to be nice and soft. So at the 10 minute mark, I tossed the dumplings in the broth as well to boil. The rest of the family did not want a soft meal. So I utilized the air fryer. I seasoned some green beans with a little olive oil and a sprinkle of salt. And then I put that on the tray with some frozen dumplings. Air fried at 400° for about 12 minutes. The air fryer is a perfect tool when you are looking to quickly get more textured food on the table. It’s my secret weapon to making meals for elderly parent and for the rest of the family easily. Once the air fried dumplings and the boiled dumplings are ready. It was time to plate! For elderly parents meal, I combined a little bit of leftover rice, some crab stick, chopped up super small for extra protein, some soft, steamed vegetables that I had made earlier this week. And then I poured the hot broth and dumplings over top. I finished off the broth with a drizzle of toasted sesame oil. The rest of the family got the air, fried green beans and dumplings. And I with sliced mushrooms from the broth, toasted sesame oil and some leftover dumpling sauce. #caregiver #elderlycare #softfood #dumplings #creatorsearchinsights
