Crembo cake 22cm springform pan Oven temp 170c For the sponge: 4 eggs 90g white sugar 2 tbsp neutral oil 4 tbsp milk 40g unsweetened cocoa powder 40g self raising flour For the cream: 300ml double cream 1/4 tsp vanilla essence 1 tbsp powdered sugar 1 tbsp cornstarch (optional) helps stabilize the cream Chocolate topping: 160g cooking chocolate at around 52% cocoa 200ml double cream Method: 1. in a bowl whisk together the 4 eggs and gradually add the sugar. The eggs should become lighter in colour and creamy in texture. 2. Pour in the oil and milk, mix. 3. Stir in the cocoa powder and then the flour. 4. Pour into the baking pan and bake for around 12-15mins. 5. Remove from the oven and leave to cool completely. You can place in the fridge to speed up the process. 6. For the cream whip on high speed and add the sugar and vanilla. Whip until the cream starts to thicken then add the cornstarch and whip until the cream is firm and holds it shape. 7. Spread over the cake base. Ensure edges are clean and straight, wipe edges of the pan with tissue if necessary. Place back into the fridge for 1hr. 8. To a bowl add the chocolate and cream then sit the bowl over a pot of boiling water and slowly melt until smooth. Remove from heat and let it cool then pour over the cream cake.
