Add the soft (but not melted) butter in small pieces and knead for a further 8 minutes, until the dough is smooth (it's normal for it to stick!). 6. Leave the dough to rest in a large container covered with a clean cloth. I put the container on a heater to make it go faster, but ideally you should leave it to rest for 2 hours, as the dough should double in volume. 7. When the dough has risen, take a weighing scale and weigh out balls of dough weighing around 115 grams to obtain medium-sized burger buns. +++ For this step, don't hesitate to put flour on your hands and on the work surface where you're going to form the ball (the dough is still sticky!). 8. To form a nice ball, flatten the dough a little on the flour-covered work surface and bring the four ends inwards, as if you were making an envelope. Then turn the dough over to make it round. 9. Again, let the dough balls rise for 1 hour on baking paper. 10. Preheat oven to 200 degrees. 11. Bake for 11-14 minutes and let the buns cool on a rack after.
