I served this with garlic roasted Mediterranean veggies. . Ingredients. . 50g chorizo (diced) 500g chicken (diced) 1tbs ground coriander 1tbs smoked paprika 1tsp salt 1tsp sugar or 1/2tbs sweetener . 1 onion (diced) 4tsp garlic puree or 4 cloves 1tbs tomato purée 300ml chicken stock 120ml single cream - I used elmlea light 500g cooked, leftover basmati rice - I used microwave pouches. . Method. . Fry the chorizo until the oils are coming out and it’s crispy, then remove from the pan until later. Season the chicken with all the spices and fry it off. Once the chicken is starting to brown add in the onion. Once the onion is soft add in the garlic and the tomato purée and allow to cook for a minute or so. Next add the stock and cream and allow it to reduce down for a few minutes. Add in the cooked rice and mix well. Add the chorizo back on top. I garnished ours with some garlic aioli, fresh parsley and a squeeze of lemon. Serve and enjoy . The aioli was just 4tbs light mayo, 1 clove garlic (finely grated), pinch salt and 1-2tsp water to loosen it. Mix it all together and drizzle over ❤️ .
