While it’s heating, place a baking sheet inside to warm up. Season the salmon with salt and pepper. In a bowl, toss the frozen vegetable mix with 1 tablespoon of olive oil and your preferred seasonings. Once the oven is preheated, carefully remove the hot baking sheet and spread the seasoned vegetables evenly on it. You should hear a satisfying sizzle. Wrap the salmon in foil and place it on a separate baking sheet. Bake both the salmon and veggies in the oven.
