Add bay leaves and season with salt and pepper and bring the sauce to a simmer for 20 minutes 6. Use your large spoon to make small wells in the sauce and crack the eggs into each well. Cover the pan and cook for 5-8 minutes, or until the eggs are done to your liking. 7. Garnish with chopped cilantro, parsley, and or basil. Served with warm sliced bread I hear so often how difficult it is to find your village, and I agree.. it’s not as easy as it was as kids and college students! Obviously use your senses, but don’t underestimate saying hello to a stranger who you maybe see regularly at the park, coffee shop, library story time, or any public communal space!
