Just whipped up some delicious Arancini on Napoli sauce, topped with Parmesan and basil. Had some leftover risotto from the freezer, and made a fresh Napoli sauce to go with it. Perfect for a cozy night in. 🍅🧀🌿 Ingredients: For the Napoli Sauce: 	•	1/2 onion, diced 	•	2 cloves garlic, minced 	•	1/4 cup olive oil 	•	A handful of basil leaves 	•	1 can chopped tomatoes 	•	1/4 can of water 	•	Chicken stock (to taste) 	•	Salt (to taste) For the Arancini: 	•	Leftover risotto 	•	1 egg, whisked 	•	Flour 	•	Bread crumbs Method: 	1.	Prepare the Napoli Sauce: 	•	Heat 1/4 cup olive oil in a pan. 	•	Add diced onion, minced garlic, and basil leaves. Sauté until fragrant. 	•	Add the can of chopped tomatoes, 1/4 can of water, chicken stock, and salt. Stir to combine. 	•	Let the sauce simmer on low heat while you prepare the arancini. 	2.	Prepare the Arancini: 	•	Take the leftover risotto and form it into balls. Place them in the freezer to firm up. 	•	Set up a dredging station with three bowls: one with flour, one with whisked egg, and one with bread crumbs. 	•	Coat each risotto ball in flour, then egg, and finally breadcrumbs. 	•	Place the coated risotto balls in the air-fryer and cook at 200°C for 20 minutes. 	3.
