@xavskitchen: WELCOME TO CRUISING THE CARIBBEAN 🏝️ my brand new series showing you how to make some of the best dishes from the Caribbean. this is part 9 and today we’re taking a trip to Barbados, to make Bajan Fish Cakes 🇧🇧 (10 cakes) 6 small potatoes 1 small onion finely diced 3 garlic cloves finely diced 2 spring onion stalks 1/2 red pepper 1/2 cup chopped coriander 5 sprigs of thyme 1 tbsp Bajan hot sauce 200g saltfish 1 egg 1/4 cup flour 500ml frying oil (1) Cut your potatoes in quarters then place in a pan of cold water, turn on the heat and bring to a boil. Once boiled, simmer for 20 minutes until fork tender, remove, mash and set aside. (2) In a large pan of boiling water, add your saltfish and boil vigorously for 15 minutes, then drain and rinse. Repeat this step again, then the saltfish is ready. Now add all the ingredients together in a large bowl, mix very well. You are looking for a wettish batter. (3) Now heat up some oil until hot, then add a spoonful of the batter at a time, don’t overcrowd the pan. Once golden brown and crispy, remove and drain using a wire rack, then pat of excess oil with tissue paper. Serve with some hot sauce and enjoy #fishcakes #barbados #caribbeanfood
