Thursday 4 September marks Macadamia Nut Day — a global celebration of our favourite creamy, crunchy native nut. Spread out a picnic rug, gather your nearest and dearest, and indulge in the buttery delight of Australian macadamias. Their rich flavour and satisfying crunch make them the perfect companion for a spring picnic — whether it’s at the beach, in the park, or in your own backyard. There’s something special about savouring macadamias with the people you love 💛 The amazing @littlekalegirl has created this Mac-nificent macadamia hummus. Creamy, nutty, and topped with a little crunch — perfect for a picnic platter with olives, carrots, cucumber, cherry tomatoes & crackers. Macadamia Hummus Recipe Ingredients: • 2 cups cooked chickpeas (plus extra for topping) • 1 cup soaked Australian macadamia nuts  • 1/3 cup tahini (for extra creaminess) • Juice of 1 lime • 1 tsp paprika powder • ½ tsp ground cumin • 3–4 tbsp macadamia oil (plus extra for roasting) • ¼ cup chickpea water (aquafaba) — adjust to desired consistency • 1 tsp salt (or to taste) • 1 whole garlic bulb, roasted • 4 ice cubes (for fluffiness) • Optional topping: roasted chickpeas & macadamias (tossed in paprika, macadamia oil & salt) Method: 1. Soak macadamias in hot water for 1 hour (or overnight in cold water). Drain well. 2. Roast the garlic bulb until soft and golden. 3. In a blender or food processor, add chickpeas, soaked macadamias, tahini, lime juice, paprika, cumin, macadamia oil, aquafaba, salt, ice cubes, and the roasted garlic cloves. 4. Blend until ultra-smooth and creamy, adding more aquafaba if needed. 5. For the topping: roast extra chickpeas & macadamias with paprika, macadamia oil & salt until golden and crunchy. 6. Spoon hummus into a bowl, drizzle with macadamia oil, and scatter over the roasted toppings. Pro tip: Blend for at least 2–3 minutes — the ice keeps it cool so you get that restaurant-level silky texture.
