@thetwoeggz: Diabetic-friendly recipes: low-carb Japanese curry Ingredients (Serves 2 people): -1/2 cup brown rice -2 medium chicken breasts -1/4 cup white onion -3 chopped eggplants -1 cup chopped carrots -1/3 box Japanese golden curry -1 cup shredded cabbage -Seasonings for chicken: salt, pepper, cumin, paprika, olive oil -Furikake seasoning for rice -Kewpie mayo for cabbage Instructions: 1. Chop vegetables and add to boiling hot water. Cook through until tender, then add 1/3 box Japanese golden curry - we used medium hot. 2. Dice chicken breasts and add to pot of curry with vegetables, season chicken as desired for flavor. Stir pot every 1-2 minutes, then cover pot and let simmer on medium low heat for 10 minutes. 3. Heat up 1/2 cup pre-frozen brown rice. Once curry is thickened, plate on top of brown rice. Season with furikake. 4. Serve with side of shredded cabbage and drizzle with kewpie mayo. You could also put in the potatoes but not put the curry over rice, so the potato is your carb. Husband is Type 1 and he would more likely spike from rice than a potato, but everyone is different.

You might try Farro or Buckwheat instead of brown rice- more fiber - the macros of white v brown rice aren’t all that different 🤗

I love doing Japanese Curry with Garlic, Onions, Zucchini, Broccoli, & Tofu. it's so customizable & good to hear that the sauce is low enough in sugar to be diabetic friendly
