Sourdough terminology pt. 2. Sourdough starter: this is the rising agent in sourdough baking. You would use this instead of using instant yeast. It is just flour and water that has captured a wild yeast in the air. This is the heart of sourdough baking and probably the most important part of the process. Leaven: this is the exact same thing as your sourdough starter but it’s typically a lot more and in a different container. A good practice is the day before you want to make dough, split your sourdough starter into two containers. Feed one like normal and then the second container you would calculate how much starter you need for your recipes and then feed it that amount. This helps prevent you from tainting your mother starter and ensuring you always have some left over. You can also feed them two different ratios or flour types. Cold proof: this is the last step in sourdough baking (at least for artisan loaves) where you cool the dough down to stop fermentation.  Poke test: after you cold proof for at least 8 hours, if you poke the dough your imprint should slowly fill back in. If it doesn’t fill in at all it is over proofed and you will have a flat loaf.  Scoring: this gives the bread a way to rise by opening the crust allowing the steam to escape during baking. If you do it properly you can create an “ear” which is a sought after quality in artisan bread.  Lame: this is the tool I use to score. I use @wiremonkeyshop lames because they are the BEST.
