CHICKEN TIKKA SKEWERS 🍗

INGREIDENTS:

- 500g Boneless Chicken thighs

Marinade:
- 30g of route ginger
- 3 garlic cloves
- 1 Scotch bonnet
- 1 white onion
- 30ml rice vinegar
- 1 chilli powder
- 1 ½ tsp ground turmeric
- 1 tsp fine sea salt
- 2 tsp vegetable oil
- 1 lime

- 25g unsalted butter
- 1 tsp sesame oil
- 2 lime wedges
- Handful of coriander

METHOD:

1) Wash your chicken thighs using 1 whole lemon

2) Cut your chicken thighs into cubes

3) Cut 1 white onion and remove skin of ginger

4) Add marinade ingredients into a blender

5) Place chicken in a bowl and mix in the marinade (Place in fridge overnight)

6) Take marinade chicken out the fridge 20 minutes before cooking

7) Place your chicken pieces onto skewers leaving a gap in between each piece so they cook evenly

8) Grill on a high heat (Make sure to rotate frequently and baste with melted butter and sesame oil

9) Let cooked chicken rest for 5 mins

10) Serve with lime wedges and garnish with coriander #chicken #healthy #Recipe #instafood #fyp #Foodie
