Let’s make an easy 30 minute dinner while my newborn naps! 👩🏼‍🍳⏳ With a new baby we have been sticking to super easy dinners that take 30 minutes or less to make, and this Honey Garlic Chicken is one of our favorites! It tastes like takeout but is much healthier for you, and its probably ready in less time that it takes to order and go pickup takeout! Recipe below, or comment ‘RECIPE’ and I’ll send it directly to you! 🫶 HONEY GARLIC CHICKEN (makes 4 servings) Ingredients: - 1 cup rice - 2 cups water - Sauce:     - 1/4 cup low-sodium soy sauce (or coconut aminos)     - 2 tbsp honey     - 1 tbsp rice vinegar     - 1 tbsp toasted sesame oil     - 3 cloves garlic, minced     - 1 tsp grated ginger - 1.5 lbs boneless skinless chicken thighs - 1 head broccoli - 1 tsp sesame seeds - 1 green onion How to: - Preheat oven to 425F. Line a large sheet pan with parchment paper. - Add the rice and water to a saucepan and bring to a boil. Once boiling, cover with a lid and turn the heat to low. Simmer for 15 minutes or until all of the water has absorbed. - Whisk together the ingredients for the honey garlic sauce. - Add chicken thighs to a bowl with half of the sauce, tossing to coat. Let the chicken marinate while you chop the broccoli into florets. - Add the chicken to one side of a sheet pan and bake for 15 minutes. - After 15 minutes, add the broccoli to other side of pan with the other 1/2 of sauce and toss to evenly coat. Return to the oven for another 10-15 minutes, then turn the oven to broil for 2-3 minutes at the end to caramelize the sauce. - Serve over rice, garnish each serving with sesame seeds and green onions.
