@oliveyousomatcha: this is how I make a simple pasta dinner for an elder parent and the rest of the family. My partner and I caregiver for her aging mother. So I have to make two versions of every meal. A soft and low sodium version for her and a regular regular version for the rest of the family. Pasta is an easy dinner to do this with! When I buy pasta, I try to grab the high protein, high fiber pasta a lot of of the time. Because why not add the extra nutrients?! For the sodium levels. So I tried to build flavor and other way. For this pasta sauce, I started with sauté shallots. Then I added lots of garlic. Then I added a low sodium stock. This added flavor and it also helped me cook down the onion and garlic, so it was soft enough for elder parent to chew. I also added some white wine, fish sauce, but just a little bit because that does have a lot of sodium in it. But it gave the sauce a nice little seafood flavor. I also added garlic powder, onion powder, smoked paprika, pesto. The pesto was just a store-bought jar pesto. Then I finished the sauce with some nutritional yeast, which gives a nice cheesy flavor without the sodium. I added a little bit of butter and some lemon juice. The sauce ended up being relatively low sodium and full of flavor Another issue when cooking for our elder parent and the rest of the family is always the vegetables. Our parent needs them nice and soft. And the rest of the family not super super soft vegetables. Easily solve this problem by steaming large batches of vegetables, two or three times a week. That way I can just easily add them to meals. And I often rely on the air fryer, the rest of the vegetables. To air fry vegetables you just need a little bit of olive oil. You can add a little salt as well. And depending on the vegetable I air fry it at 400°F for about 8 to 12 minutes. Air fried shrimp. Again, just an easy way to get it done!
