hi. quick question: why do you remove the skins? i always added the tomatoes whole in a pot, let them cook and blended them with a hand blender (with the skin): the sauce is always smooth at the 1/2

I put extra canning lids in the bottom of my pot, the jars sit nicely on them and *knock on wood* none have broken yet. Simple method if you don’t have a water bath canner.
