Chocolate Cornflake Dream cake. The feuilletine are a firm favourite -v- cornflakes (So yummy just scoffing them with a spoon!) but I'd definitely tweak this next time and omit the layer of whipped ganache. We served it with pistachio kunafa and ice cream to cut through the intensity of the chocolate layers and it makes sense why it's served in a tin as it gets messy. I love Preppy Kitchen Ding Dong cake but I had no buttermilk so usual fave 'all in one' recipes; this one is by Mary Berry and as simple as: Blend the cocoa and boiling water in a large bowl then add the remaining cake ingredients and beat until the mixture has become a smooth, thickish batter. Pour in to lined/oiled cake tin and level the surface. Bake at 160 or 180 degrees for around 25-30 mins, Bake in a pre-heated oven for about 25-30 minutes or until well risen. 50g (2oz)sifted cocoa powder 6 tbsp boiling water 3 eggs (room temp) 50ml (2fl oz) milk 175g (6oz) self-raising flour 1 rounded tsp baking powder 100g (4oz) softened butter 275g (10oz) caster sugar Chocolate ganache (1:1 600g chocolate + 600ml double cream) gently warmed through in microwave. Touch of salt and vanilla. I added liquid glucose for longevity and stability. Top off with Feuilletine crushed biscuits mixed with melted belgian milk chocolate (can add coconut oil/golden syrup if you want some fluidity to remain, just a touch though). #dreamcake #chocolatecake #cornflakes #feuilletine #crunchy
