I love recipes which are quick and taste great - this ticks all the boxes as well as pretty much being a one pan wonder (although the pan I used may be a tad too small for 3 portions). This was 552 calories and 40g of protein per portion. Ingredients for 3 people: - 400g 5% fat beef mince  - 180g rice (dry weight) - 1 cal spray  - 3 eggs - 120g peas - 120g pepper - 120g sweetcorn - 3 spring onions Sauce: - 60g soy sauce - 30g honey  - 20g sriracha  - Half the juice of a lime (you might want to add more if you like it more tangy)  - 3 garlic cloves Method: Start by frying 5% fat beef mince on a medium heat and Season it with salt and Chinese 5 spice  Break it up and then when it’s all browned off, move it to the side of the pan and add in your veggies You can use any veg you like, I used  peppers, sweetcorn, spring onion and frozen peas. Cook them for a couple of minutes and then mix the veg into the beef. Push the mix to the side and add in rice. Day old rice from the fridge is best, but I’m not that organised so I just used rice that I cooked 20 minutes ago.  My rice was still warm so I only pan fried it for a minute before mixing it in - If you’re using day old rice cook it for longer until its hot.  Make some space to crack in the eggs - Let the white set a bit , season them and then scramble.  Once the egg is nearly cooked, mix that in too.  Finally add in the sauce made from the ingredients in the caption and mix for a further 1-2 minutes. Serve that up into three portions and enjoy!
