If you’re tired after work and want something fast and delicious make this Indonesian curry with udon noodles in under 30 minites. With ingreinets below you’ll get 3-4 meals out of this!! Ingredients: -              1 packet of udon noodles -              2 chicken thighs with the bone and skin -              ½ a red pepper -              1 Pak choi -              2 garlic cloves -              ½ red chilli -              2 limes, juiced -              2 tbsp crunchy peanut butter -              2 tbsp dark soy sauce -              1 tbsp hoisin sauce -              1 tsp fish sauce -              1 small tin coconut milk -              Water, optional to adjust the thickness of the curry t the end Method: 1.        Chop chicken thigh into small chunks, and set aside 2.         Finely slice the garlic and red chilli, set aside 3.        Chop the peppers into cubes and slice the Pak choi nice and small cubes aswell, keeping it similar sizes 4.        Start by sautéing the chicken in a pan with some oil until slightly golden and cooked through, transfer to a bowl 5.        Then in the same pan start cooking down the chilli and garlic, try not to colour them too much, once they are nice and fragrant add in the peppers and Pak choi, cook for a couple of minutes, you want them to be cooked but still have a nice bite to them, it gives a nice texture when eating the curry and also helps with the speed of the dish, once cooked transfer into the bowl with the chicken 6.        Then in the same pan again we can start the sauce, add in the remaining ingredients an mix well, place on a medium to high heat stirring until it starts to bubble and reduce, add back in the cooked veggies and chicken, check the seasoning then add in your udon noodles, mix well again and keep on a medium heat for 2 minutes or until the noodles are nice and hot 7.        This is where you can add a splash of water if it becomes slightly too thick or vice versa if its still a little runny add a touch more peanut butter and reduce further 8.        Serve in a bowl, if all goes to plan the dish shouldn’t take you longer than 30 minutes start to finish 9.        Garnish with coriander red chilli
