As mentioned the most important part is to make sure you reduce to a very low simmer with a lid ajar, don't walk away until you make sure you have a very low simmer. If you simmer it to high or boil it for the 45 minutes you will be left with a very thick syrup! still usable but for the best consistency bring to boil, put a lid ajar and reduce to the lowest simmer possible. Add your 3/4 -1 cup of honey after straining, keep in the fridge and you are done! Did kit n water to boil, then low 45 mins (instr didn’t say lid). Lost a lot of liquid cause it seemed to keep boiling. Only got about 12 oz. and smelled kinda burnt. Syrup is brown 🤦🏻♀️
