Waffle Hash Browns, with Veggies  This recipe contains veggies like carrots, bell peppers, and spinach. It makes for a tasty meal or works well as a side dish. This is also great to pack in a lunchbox. Ingredients: ▪️2 tablespoon avocado oil ▪️1/2 cup small diced bell peppers, I used yellow bell peppers ▪️1/4 cup small diced onions ▪️1 garlic clove, minced ▪️2 cups shredded russet potatoes ▪️1/2 cup shredded carrot ▪️1 cup shredded monterey jack cheese ▪️1/2 cup spinach, finely diced ▪️3 large eggs ▪️1/2 teaspoon salt Method: Add oil to a saucepan and allow it to get hot. Add the onions and bell peppers. Sauté the onions and bell peppers for about 3 minutes over medium heat or until the onions are translucent. Add the minced garlic and cook for a few seconds.  Set it aside. Place the shredded potatoes in a strainer and run water over the potatoes to help rinse them. Transfer them to a kitchen towel and squeeze out the moisture very well. Set it aside. To a bowl, add the eggs and whisk them. Add the shredded potatoes, shredded carrots, shredded cheese, finely diced spinach, the sautéed veggies, and the salt.  Mix and set it aside. Preheat the waffle maker. Scoop the mixture into the waffle maker making sure to fill up each slot or section.  Allow it to cook for about 6-7 minutes or until the waffles are set and golden brown.
