@reubencancook: It has been fun deliberately choosing unfamiliar vegetables to cook with. It really widens your options when doing groceries, and you might find something new that you actually like. In Singapore we see alot of tubular shaped vegetables. People think zucchini or cucumber but there are a whole range of gourds. Case in point is today's vegetable, the Luffa. For me, one of the easiest way to introduce yourself to a new vegetable is to stir fry it, especially with eggs. This is a vegetable that seems to he quite popular amongst the older generation but I would never see it in the grocer baskets of those my age or younger. To me it doesn't seem to have alot of flavour but takes up other flavours pretty well. What's your favourite way to cook this? Recipe for FOUR to share Ingredients: 200g luffa 4 eggs 2 cloves garlic, minced 1/2 chilli, thinly sliced 2 tbsp grapeseed oil 1 tsp toasted sesame seeds 1 tsp sesame oil Instructions: 1. Prepare the luffa by removing the tough outer layer then cutting to the desired size 2. Scramble 4 eggs in a pan with some oil and season with salt or soya sauce then set aside 3. Stir fry garlic and chilli in grapeseed oil then add in the chopped luffa 4. Season lightly with salt until the luffy is tender 5. Mix in the eggs and toss with the stir fried luffa 6.
