Who says Pinoys don’t love their veggies? 🌱 Veggie Kare-Kare has been done before and we believe it’s as good as its classic versions! Puso ng saging (banana heart) adds that “meaty” factor that we all love, and you can go crazy with the other veggies that you want to add to your own version. What series should we try doing next? 🤔 @Erwan Heussaff  PUSO NG SAGING KARE-KARE Ingredients: 3 tbsp annatto seeds ¼ cup chicken oil 2 tbsp oil 2 pcs eggplant, sliced lengthwise then into 2 inch pieces 2 medium red onion, chopped 7 cloves garlic, minced 2 tbsp bagoong alamang ¼ cup smooth peanut butter ½ cup rice, toasted and crushed ¼ cup crushed peanuts 2 cups water 10 pcs string beans, cut into 2 inch pieces 1 medium banana heart long, outer layers peeled then soaked in water 4 bunch pechay bagoong (sauteed shrimp paste) Procedure: 1. In a pan, heat up your annatto seeds and oil until it takes color. Strain the oil and set aside. 2. In a pan with hot oil, brown your eggplants and set aside. Using the same pan, saute your onions and garlic. 3. Add 3 tbsp annatto oil followed by bagoong and peanut butter. Add rice and peanuts followed by water. You may add another tbsp of bagoong. (optional). 4. Blanch your string beans and pechay for a minute. Set aside. Blanch your puso ng saging for 2 minutes or until tender.
