this creamy broccoli pesto chicken with spaghetti squash is proof that eating healthy doesn’t have to be boring 🥦 the pesto is dairy free and has a crazy amount of *undetectable* broccoli in it. serve it over spaghetti squash (it’s in season right now) to make this gluten free or pick your fav pasta 🍝 RECIPE: (gluten free, dairy free) for the broccoli pesto: -8 oz broccoli florets -1 packed cup fresh basil leaves -1/4 cup pine nuts -1/4 cup nutritional yeast (you can sub grated parm if you’re not dairy free ) -juice from 1 small lemon -2 cloves garlic -1/4 cup olive oil  -salt to taste for the chicken: -1-1.5 lbs boneless chicken breast, cut in half lengthwise  -salt + pepper  -olive oil -1 cup full-fat canned coconut milk to serve: -1 spaghetti squash -olive oil or spray  -salt + pepper  preheat oven to 400F. cut spaghetti squash in half and scoop out all the seeds. then, brush the inside with a  bit of olive oil or spray and season with salt + pepper. place onto a baking sheet with the cut side down. poke holes on the outside with a fork. bake for 30 minutes or until tender. meanwhile, boil or steam your broccoli until very tender (took me about 10 minutes). then, add basil, pine nuts, broccoli, lemon juice, nutritional yeast, garlic & salt to a food processor & blend. scrape down the sides as needed (you may have to do it in multiple batches if you’re using a small food processor). start slowly pouring in the olive oil. at this point, it’ll be pretty thick so you can thin it out with about 3 tbsp of the canned coconut milk. preheat a large pan to medium-high heat. season chicken breasts with s+p on both sides. once pan is hot, add a little olive oil and then the chicken. cook for 3-4 minutes per side or until done through. remove chicken & set aside. reduce heat to low and add the coconut milk. then, add the broccoli pesto and stir until smooth. add back in the chicken and get it coated in the sauce. let that simmer for a few minutes to warm everything up. serve over spaghetti squash. enjoy! #pesto #spaghettisquash #veganpesto #homemadpesto #broccoli #broccolipesto #chickenrecipes #healthydinnerideas #healthyrecipes #glutenfreedairyfree #lowcarbrecipes
