@foodwithbearhands: Beef Wellington Bites Recipe below ⤵️⤵️⤵️ Makes: 15 bites Feeds: 3-4 ppl For the Wellington Bites: 2 @Omaha Steaks Filet Mignon 3 Tbsp Omaha Steaks Seasoning 8 oz Baby Bella Mushrooms 1 Shallot 4 Garlic Cloves 6 Tbsp Worcestershire Sauce 1 Tbsp Thyme Sprigs 2 Puff Pastry Sheets 1/8 Cup Flour 15 Tsp Ground Mustard 3 Egg Yolks 1 Tsp Salt 1 Tsp Pepper For the Horseradish Chipotle Sauce: 1/2 Cup Crème or Sour Cream 1/8 Cup Mayo 1 oz Apple Cider Vinegar 1 oz Water 4 Tbsp Prepared Horseradish 2 Chipotle Peppers in Adobo 4 Tbsp Fresh Chives 1 Tsp Salt 1 Tsp Pepper How to: 1. Cut filets into bite sized pieces, season, and sear on all sides 2. While preparing the duxelles, place the meat in the freezer for 15-20 minutes to slightly chill it. This will slow the cooking process in the smoker or oven without freezing the meat. Avoid letting it freeze solid. 3. To make the duxelles add finely chopped Bella Mushrooms, Shallots, Garlic, and Worcestershire sauce to a medium high heat pan and sweat it out for 5-6 minutes. Then add Garlic and Thyme and mix until fragrant 4. When duxelles have all the moisture taken out put to the side 5. Next roll out the puff pastry so that it cooks faster using flour on the surface to make it easy to work with 6. Cut out squares and then dollop your duxelles and a squeeze of ground mustard 7. Add your steak bite then fold over all the corners 8. Add an egg wash - DO NOT skip this step this makes it golden brown 9. In the oven or smoker at 450 degrees for 12 minutes or until golden brown 10. Top with Horseradish Chipotle Cream Sauce and chives For the Horseradish Chipotle Sauce: 1.
