sushi rice is expensive overseas, the nori is expensive too and you can't just buy cheap fish because that would be dangerous so combine all of that and the other foreign ingredients that are hard+

no one pays 100$ for rolled sushi. at worst you're maybe paying 25$ for a roll in most of America. Maybe expensive cities are more but I've never paid more than 20 something for a specialty roll.

quality of the fish is what makes it more pricey. in europe they put you garbage inside and sauces so you cannot enjoy the quality of the fish as it doesn't exist. and they charge you more
