Pizza Stuffed Pull-apart Garlic Bread  Ingredients: Makes 2X 9” cake pans  - 200g bread flour  - 400g All purpose flour (plain) - 6g sugar - 6g salt  - 7g yeast  - 375g water (tepid, 30-35°C)  - 55g olive oil  - 200g pepperoni, diced  - 300g low moisture mozzarella, cubed 1. Combine both flours, sugar, salt and yeast to a large bowl and whisk to combine before creating a small well in the centre.  2. Pour in the olive oil and water and using a knife or flat spatula make cutting motions to incorporate all the ingredients. When a shaggy ball of dough forms, turn it out onto the bench and knead for 2-5 minutes or until you have a smooth ball of dough. Lightly oil the bowl, place the dough in and leave covered for 1 hour or until doubled in size 3. Punch the dough down then remove from the bowl and cut into 18 equal portions (9 for each tin or all in 1 big tin). Roll into small balls then roll flat.  4. Fill with the mozzarella cubes and pepperoni. Bring up the edges to fully cover the fillings and pinch the seams fully closed, making sure it’s airtight.  5. Arrange in a sprayed and lined cake tin or baking dish and cover for 30 mins in a warm place or until the dough has risen again.  6. Lightly brush with egg wash and bake in an oven preheated to 180°C for 10-20 mins or until golden brown on top (rotating if your oven has hotspots)  7.
