Butter Chicken Pie: Ingredients: For Chicken Marinade: - 4-5 Chicken Thighs (cut into chunks) - 3 tbsp Natural Yoghurt - 3-4 Garlic Cloves (grated) - 1 tsp Ginger Paste (or fresh grated) - 1/2 Lemon (Juice) - Pinch of Salt - 3/4 tsp Turmeric - 3/4 tsp Cumin Powder - 1 tsp Coriander Powder - 1 tsp Chilli Powder - 1 tsp Garam Masala - Pinch of Methi (Fenugreek) Leaves - 2 tbsp Vegetable Oil - 2 tbsp Ghee - 1 Onion - 1 Garlic and Ginger block (or 1 tsp each fresh alternative) - 3 Tomatoes - 1 tbsp Tomato Purée - 1/2 tsp Turmeric - 3/4 tsp Cumin Powder - 1 tsp Coriander Powder - 1/2 tsp Chilli Powder - Handful of Cashew Nuts - 3/4 tsp Garam Masala - Pinch of Methi Leaves - 30g Butter - 50-80ml Single Cream - 2 Parathas - 1 Egg (beaten) Method: 1. Marinate the chicken in the ingredients listed and set aside for 1-2 hours. Add a splash of oil in the pan, cook the chicken pieces on both sides till golden. Remove and set aside. 2. Add the ghee to the pan and rest of the oil along with sliced onions. Cook for 15-20 minutes until softened, then add the garlic and ginger and cook for a few minutes. 3. Add the tomato as halves, let cook for 10 minutes on low heat and remove the tomato skins. Break the tomato down, add the tomato purée and cook for a few minutes. 4. Add in the spices (except garam masala and Methi) and cashews, then stir and cook for a few minutes. Then add 450ml of water, bring up to heat and simmer on medium for 8-10 minutes. 4. Once done, blend the contents, then add the Garam masala and Methi leaves. Stir, then add butter and cream and stir. Add the chicken back in, stir then put the lid on and simmer on low-medium for 5 minutes. Top with streaks of single cream and chopped coriander. The butter chicken in done. 5. Grease a small baking dish. Allow your two Parathas to soften at room temperature. Line the dish with one paratha. Then fill with the butter chicken (allow it to cool completely before doing so). Then top with the final paratha, seal all the way around using a fork, cut slits in the top, then brush with egg wash. 6. Place in the oven for 25-30 minutes, gas mark 5 until crisp and golden. #butterchicken #indianfood #indianrecipes
