This harvest chicken salad has lots of crunch & flavor and pairs great with some homemade sweet potato fries! 😊✨🍎🍠 Ingredients: -2 large chicken breasts sliced in half & tenderized -olive oil -itailian seasoing -smoked paprika -garlic powder -salt & pepper -2 apples diced -2 celery stalks diced -1/4 of a red onion finely chopped -handful of parsley finely chopped -1/3 c chopped pecans -2 tbsp maple syrup -2 tbsp dijon mustard -1/2 c plain greek yogurt Optional: -2 sweet potatoes cut into 1/2" fries Steps: 1. Preheat oven to 425 2. Season both sides of chicken with oil, garlic powder, smoked paprika, itailian seasoning, salt & pepper and bake for 14 minutes 3. Season sweet potatoes with oil, garlic powder, smoked paprika, salt & pepper and place on baking sheet so fries are not touching, bake for 20 minutes 4. Toast pecans on medium heat for 6-8 minutes or until nuts become fragrant 5.
