@myfoodspree: Falahari Quinoa Tikki - Navratri Special Ingredients 1 medium sized sweet potato 1/2 cup quinoa 1/4 cup amaranth flour (Rajgira flour) 1 1/2 cup crumbled paneer 1 tsp cumin powder Sendha Namak (rock salt) as per taste 1 inch ginger 1-2 green chillies 1/4 cup green coriander leaves Ghee or oil for cooking Instructions ( makes 8-10 tikkis) Wash quinoa and cook as per instructions. Drain and squeeze excess water out and divide in two equal parts. One part will be used in tikki mixture and the other will be used for coating. Wash, peel and boil sweet potato. Once done, drain water and set aside. Grind green chilli, ginger and coriander leaves to make a coarse paste. In a bowl add sweet potato and mash. Add half of quinoa, paneer, amaranth flour, coriander paste, cumin powder, salt and mix. Divide in equal parts and shape like balls. Flatten and coat with quinoa on both sides. Now you can air fry, shallow fry or bake these tikkis. *️⃣SHALLOW FRY: Heat ghee in a pan. Place quinoa tikkis. Cover and cook on low to medium heat till the bottom side turns golden brown. Flip and cook till the other side turns golden brown. Cook on high heat without lid for a few minutes till quinoa coating turns crisp. Serve with falahari chutney or dahi. *️⃣AIR FRYER: Preheat Air fryer at 400. Line basket with air fryer liner. Place tikkis. Brush with oil (optional). Cook for 15-18 mins at 400 till they turn golden brown and crisp. Flip halfway if required. *️⃣OVEN: Pre heat oven to 400 F. Place tikki on a baking tray lined with parchment paper. Bake at 400 for 25-28 mins till tikkis turn golden brown and crisp. Flip halfway.
