Tequila Prawn & Chorizo Tacos with charred pineapple salsa and Avocado crema - Takeaway Tacos - Episode 4 Recipe for 8 tacos Ingredients: Prawn & Chorizo: 32 large prawns 400g Chorizo - @mexgrocer 50ml Tequila - @mexgrocer 1 tbsp olive oil 1/4 cup coriander 1 juice of lime Salsa: 1/2 Pineapple 50g Peanuts 1/2 red onion 1/2 red pepper 1 jalapeño 1/4 Coriander 1 juice of lime Avocado crema: 2x avocado 1 cup coriander 2 cloves of garlic 1 jalapeño 1 cup soured cream 1 juice of lime 1 tsp sea slat flakes 1/2 tsp pepper Prawn seasoning: 1 tsp cayenne 1 tbsp cumin 1/2 tsp pepper 1 tsp salt Tortillas: Flour tortillas 8 tsp Salsa macha - @chilimaven Method: Slice the pineapple and char it over an open flame before dicing. Add to a bowl with pepper, red onion, peanuts, jalapeño, coriander, and lime juice. In a blender, combine avocado, coriander, garlic, jalapeño, lime juice, and sour cream, then blend until smooth. Dice the chorizo and lightly fry it in olive oil. Season the prawns with cayenne, cumin, salt, and pepper, tossing to coat evenly. Add the prawns and chorizo to the pan, cooking the prawns for 2-3 minutes until done. Pour tequila into the pan and ignite, allowing the alcohol to burn off. Finish with coriander and lime juice, then remove from heat. Lightly toast tortillas in a pan, adding a tsp of salsa macha for extra smokey spice.
