The meat and veggies can be prepped ahead of time making it an easy weeknight dinner! @Subway INGREDIENTS 1 lb chicken breast 1 package of kielbasa 1 sliced onion 2 sliced peppers 4 potatoes Sweet Onion Teriyaki Subway Sauce 1 tsp each salt, pepper, paprika, onion powder, and garlic powder 1/2 tsp red pepper flakes Chopped green onions INSTRUCTIONS Peel, wash, and chop potatoes into small cubes. Bring a pot of water to a boil. Add the potatoes and boil until they are fork tender. Once potatoes are tender drain them. Slice an onion and two peppers. Chop chicken into cubes and slice the kielbasa into rounds. Spray a large sheet pan with cooking spray. Add the chicken, kielbasa, all of the veggies, and the potatoes. Season the chicken, potatoes, and peppers and onions with the all of the seasonings. Bake in the oven at 400 degrees F for about 20-25 minutes or until the chicken temps at 165 degrees and the veggies are tender. I like to turn the oven to broil and let the kielbasa get crispy for just a couple of minutes. Top with Sweet Onion Teriyaki Sauce and the chopped green onions.
