Pasta e Ceci, or pasta with chickpeas, is a simple & hearty Italian dish that is one of my families favorite comfort food dishes. Ingredients: * 1/4 Cup Olive Oil * 1 Onion - Diced * 4 Cloves Garlic - Minced * 2 Carrots - Fine Dice * 1 Celery - Fine Dice * 15 oz Can Chickpeas - With Juices * 14 oz Can Diced Tomatoes With Oregano, Basil & Garlic * 4 Cups Chicken or Veggie Broth * 1 tsp Kosher Salt * 1 tsp Black Pepper * Pinch of Crushed Red Pepper * 1 - 1 1/2 Cups Ditalini * Parmesan Cheese Rind + Grated Cheese * Fresh Parsley * Olive Oil Directions: 1. Add 1/4 cup olive oil to a pot over medium heat - add in the carrots, celery & onion & sauté for 5-6 minutes. 2. Next add in the crushed red pepper & garlic, cooking for 1 minute longer. Stir in the chickpeas & the tomatoes & simmer for 5 minutes. 3. Add the chicken broth, cheese rind, salt & pepper to the pot. Cook at medium-low for 20-25 minutes. 4. Add the ditalini & simmer until just Al dente - about 9-10 minutes. Season with salt and pepper if needed. 5. Serve with a drizzle of nice olive oil on top, grated cheese & parsley. #pastaececi #comfortfood #onepotmeals #dinnerrecipe
