BIT ON THE SIDE ep 8 - fried manchego with romesco 🧀🫑 maybe feeling just a *little* inspired after my trip back to Cyprus with this saganaki rip off but also really wanted to combine manchego with romesco because they’re pretty much two of my favourite things? Would you try this? Romesco 2 large red capsicums (otherwise known as bell peppers!) 1/4 cup blanched almonds 1 garlic clove 1 tbsp EVOO 1/2 tbsp red wine vinegar 1/2 tbsp smoked paprika Salt Sizeable piece of manchego cheese, remove any rind Flour and oil QB Lemon to serve To make the romesco first roast the capsicum (no oil, just dry in a baking dish) at 220c for approximately 30 min, turning halfway. Allow to cool and remove the skins. Then simply blend all of the ingredients together. Set aside. Dust the manchego in flour then fry in olive oil until golden and crispy - a couple of minutes each side. I like to keep the cheese moving ever so slightly so the crust stays intact.
