So many chefs say “it looks better” and I ask them this… who are you trying to please? Because I would consider tail-less shrimp in my pasta no less beautiful for having no tail, but I would be much happier overall

As a chef I was taught to remove tails in dishes that aren't meant to be finger food. No idea why any fine dining restaurant would leave tails on in a pasta.
