CAULIFLOWER ALFREDO PASTA👅🤍 ( recipe below ) vegan and gluten free😊 Ingredients: - 1 medium head of cauliflower - 6 cloves of garlic - 3 tablespoons of olive oil - 1 teaspoon of salt - 1 teaspoon of vegetable stock powder (or vegeta) - 1/3 cup of cashews - 1 1/2 cups of almond milk (or any milk substitute you’d prefer:) - 1/2 cup of nutritional yeast - Juice of half a Lemon - 2 more tablespoons of olive oil for the sauce  - Salt & pepper/nutmeg to taste  Instructions: 1. First preheat your oven to 200 °C, also wash and dry your cauliflower! 2. Second, cut up your cauliflower and garlic. Place them in a medium sized pan. Add the olive oil, salt and vegetable stock powder before you pop it in the oven! Bake for 25/30 min, or until the cauliflower is soft enough to be easily pierced by a fork. 3. While that’s baking, pour boiling water over your cashews and cover them for 20min! (You can also let them soak overnight the night before) 4. Once the cauliflower turns that desired golden brown color, take it out of the oven and let it cook for a bit. Also drain the cashews with cold water. 5. Now combine everything in your blender: the roasted cauliflower & garlic, cashews, nutritional yeast, almond milk, olive oil, salt, nutmeg and juice of half a lemon! (If you want a thinner consistency add more milk!) 6.
