Legitimate question: why squeeze the excess water from the tomato at the beginning only to add water to the pan later? Wouldn’t the juices from the tomato add more flavour than tap water?

You don’t want the excess water in the beggining cooking process, it is only at that step where you reach for some stock or h20 later on. My question is; why so acidic?
