RECIPE: One-Pan Spanish Chicken and Rice🍗 Ingredients: 4 boneless, skinless chicken breasts 2 tbsp olive oil 1 shallot, chopped 3 garlic cloves, minced 1 bell pepper, chopped 1 1/2 cups long-grain rice 3 cups chicken broth 14.5 oz fire roasted diced tomatoes 1 tsp smoked paprika 1 tsp ground turmeric 1 tsp cumin 1 tsp salt 1/4 tsp pepper Salt and pepper, to taste (for chicken) 1/2 cup frozen peas For topping: Lemon wedges & chopped parsley Instructions: Sear the chicken: Season chicken with salt, pepper and paprika. Heat olive oil in a large skillet over medium-high heat. Sear chicken for 5-6 minutes. Flip and cook 2-3 minutes. Remove and set aside. Cook veggies: In the same skillet, sauté shallot and bell pepper for 3-4 minutes. Add garlic and cook for 30 seconds. Cook rice: Stir in rice, paprika, turmeric, cumin, salt and pepper. Add chicken broth and tomatoes. Bring to a simmer. Bake: Nestle chicken back in the skillet. Cover and let cook on low/medium heat for 20 minutes until chicken is cooked fully and rice is tender. Add peas in the last 5 minutes.
