Lactic acid bacteria are a natural process in the production of oat milk. That’s why the drink is good for the gut microbiome. It’s very difficult to identify individual bacterial strains with just light micrscopy. We’d need gene sequencing, gram staining, or testing against agar with certain antibiotics. Although the bacteria we observed in the oat milk are lactobacilli and probably from streptococci found in probiotics, I have no way of knowing if there is harmful bacteria in the drink. After tasting the off putting flavor, I took a smell of the oat milk and discovered how spoiled it was. It was before the expiration date and stored properly in the fridge, so it’s definitely important to keep an eye out on perishable items! Fortunately, I had no health problems after minimal consumption. On the plus side, protozoa love lactobacilli.
